Dolio began with a memory shared by both of us. We grew up in Italian homes where food was never rushed and recipes lived in the hands of our nonnas. At the center of the table was always olive oil — not something bought casually, but oil that arrived from relatives in Italy, pressed from their own harvest and sent to the family each year.
It tasted different. Fresher. More alive. Only later did we understand why.
Over time, we realized that the words extra virgin had become just a label, often detached from the care and limits that once defined it. Dolio was created to return to that original idea — olive oil produced with respect for the land, the season, and the harvest.
We are Andrea and David, and Dolio is simply our way of sharing the kind of olive oil we grew up with: honest, expressive, and made without compromise.
At Dolio, our approach is simple: respect the limits of the land and the rhythm of the harvest. Each year we produce only what the season allows.
Olives are harvested early, when the fruit is still vibrant and the oil carries its greatest intensity. Yields are lower, but character is higher. The olives are pressed within hours, cold extracted, and never blended or corrected.
We believe that olive oil should reflect where it comes from — the soil, the climate, and the choices made during harvest. Variation from year to year is not something to hide. It is part of the story.
Dolio exists to protect that honesty. Limited production, careful timing, and a commitment to doing less rather than more. Because true quality rarely comes from expansion — it comes from knowing where the limits are, and respecting them.
